HEALTHY PANCAKES

To be a #GirlBoss a #SheEO or just an all round Lady Legend, you must be at the top of your game day in, day out. Now, I hate to say it but that is a lot of pressure!

No-one is Wonder Woman, yet we all try to be.

I am a true and tried, full time believer that to be at the top of your game, AKA. Wonder Woman’s twin sister from another mister; you MUST have a healthy body and a healthy mind.
This is the cornerstone of productivity and success.

Having a healthy mind and body enables you to have a positive mindset, mental and physical energy, and to be more productive than the person next to you.

Not that it’s a competition, but let’s be honest, if it was, you would win.


So, let’s kick off your healthy body and mind with my personal favourite Healthy Pancake recipe!

This bad boy is not only extremely delicious, but one of the only (healthy) recipes I have EVER made that doesn't fall apart every time you try and make it!

Give it a whirl, do a few squats while you cook and I’ll be back with some more tips on how to turn yourself into a #GirlBoss, Lady Legend, WONDER WOMAN oh so soon!

THE BEST HEALTHY PANCAKES!

INGREDIENTS:


2 eggs
2 tbsp coconut flour
2 tbps almond milk (see recipe + YouTube demo – DIY Almond Milk)
1 tsp pure organic maple syrup
1 pinch Himalayan rock salt
coconut oil (for cooking in)

TOPPING

80g berries
2 tbsp coconut yogurt
1/2 tsp cinnamon

OTHER TOPPINGS I LOVE

- blueberries + cinnamon
- heated banana + peanut butter
savoury - smashed avocado + pepper + lemon juice

*Serves 1

METHOD:
1. Mix all ingredients together in a bowl, Leave for a moment and it will thicken slightly.
2. Coconut oil your pan and spoon in pancake mix, several small pancakes in each batch.
3. Cook until you see bubbles forming on the top and then it is time to flip.
4. Cook second side lightly.
5. Heat berries over low heat until you can mush them with a fork, to an almost liquid constancy.
6. Serve with coconut yogurt, berries & cinnamon on top.
